There are few things better than waking up to the smell of freshly brewed coffee and sizzling bacon in the great outdoors, but for those with a sweet tooth, whipping up a sweet breakfast treat over the campfire is just the cherry on top of an already magnificent sundae. Here are just a couple sweet ‘n easy campfire breakfasts that will sweeten up anyone’s morning!
Campfire Sticky Buns
You’ll need:
2 tubes of ready-made biscuits
- 1/2 stick + 1 tbsp butter
- 1/3 c dark brown sugar
- 3 tbsp corn syrup
- 1/2 c halved pecans
- Cinnamon and sugar
- 2 aluminum pie pans
- Aluminum foil
Combine the butter, brown sugar, and syrup in the pie pan and place over medium-stoked coals. Once it starts bubbling, add the pecans and stir. Dip one of the biscuit dough pieces into the butter mixture, and place it butter-side up on a plate. Sprinkle with cinnamon and sugar. Dip another biscuit, and place it on the first biscuit, butter side down. When you have coated the tops of all the biscuits in the butter mixture and placed together, arrange them in the pie pan and cover with the other pie pan upside down. Seal the two pans together with a band of foil, and place onto the coals for 15 minutes. Flip the pan over for another 15 minutes to cook the other side, and after a few minutes to cool, you’ll have delicious sugary sticky buns to compliment your morning coffee!
Rice Pudding
You’ll need:
1 c instant rice
- 1 c water, milk, or milk alternative
- 1/4 c raisins or other dried fruit
- 1 tsp cinnamon
- 2 tbsp sugar
- 1/4 tsp salt
Rice pudding is a delicious and easy campfire breakfast, and the recipe can be altered easily to accommodate one or more people, not to mention that it can be made with any stove or over the campfire. The ratio of rice to liquid will always be 1:1, which will typically result in 2 servings, so adjust your ingredients for the size of your group and your cookware accordingly. Simply bring your liquid to a boil, and add in all ingredients and stir thoroughly. Remove from heat and cover; allow to sit for 5-10 minutes. After that, stir it up a bit and enjoy a sweet eye opener that will stick to your ribs!
