One of the best parts of camping is waking up in the early morning hours to a crackling campfire and the smell of breakfast. Even if you’re not typically a morning riser, there is something irresistible about watching the sky turn from the dark shades of dawn to the ever-brighter hues of morning through the steam of a freshly brewed cup of coffee. And if your kids are anything like us here at SunnyScope, that view has a way of making you hungry!

Since some people tend to move a bit slower in the morning, breakfast should be an easy, no-muss-no-fuss affair. That’s exactly what we love about these handheld camping breakfast recipes — simple, fast, and delicious! You can cut out a lot of the work at the campsite by preparing some of your ingredients ahead of time and storing in airtight containers until you’re ready to use them. With adult supervision, these recipes are even easy enough for the kids to tackle, which makes camping mealtime more fun for everyone!

Campfire Horns o’ Plenty

Virtually everyone is familiar with cooking biscuits over a campfire by wrapping canned biscuit dough around a stick and roasting it over the flames until it’s a nice golden color. This handheld camping breakfast recipe takes that trick a bit further by stuffing them after they’re done to make a bit heartier of a meal. You can stuff them with scrambled eggs, sausage links, or shredded cheese and hashbrowns for a savory taste, or spread a little butter and strawberry jam for a lip-smacking breakfast treat — use your imagination!

If the smell of blueberry muffins baking in the morning gets you shooting out of bed and into the kitchen, you will love these campfire orange blueberry muffins! It’s as simple as cutting an orange in half, scraping out the pulp (which you can eat as you work), and pouring in some muffin batter and adding a small handful of blueberries.

Only pour the batter into one half of the orange; the other half will act as a baking lid. Then put the two halves together inside a piece of aluminum foil big enough to wrap around the whole orange, and toss into the coals of the campfire. Turn each orange over with a pair of tongs every couple minutes for 10-12 minutes, and when you carefully unwrap it, everyone will have their own freshly baked orange blueberry muffin.

If you use a plain batter, you could really add anything you want to the mix: chocolate chips, bananas, strawberries, or even granola — just have fun with it!
