
A hot and hearty meal is just what everyone is craving at the end of the trail, but no one wants to do all that cooking. How about some simple one pot backpacking dinners that will leave everyone feeling satisfied? Remember that you can always prep the ingredients at home to save space in your pack and make less work for yourself once you’re out on the trail.
1. Sausage Mac-n-Cheese
- One box of macaroni and cheese
- Sausage
- String cheese
- Olive oil
Directions:
Chop sausage and string cheese into cubes. Bring water to boil and add macaroni, allow to boil 2-3 minutes. Remove from heat, cover, and let sit 10 minutes. Drain excess water. Stir in 1 tbsp olive oil, cheese packet, sausage, and string cheese. Mix well and serve!
2. Jerky Mashed Potatoes
1 box powdered mashed potato mix
2 ounces beef jerky
Olive oil
Directions:
Break beef jerky into small pieces. Boil 2 cups of water. Add mashed potato mix, jerky, and olive oil. Stir well, remove from heat and let sit for 5 minutes, then serve.
3. Island Chicken
- Boil in bag rice
- Cooked or dried cubed chicken
- Dried pineapple
- Soy sauce
Directions:
Boil rice in a bag and drain water. Stir in chicken and dried pineapple. Let set for 5 minutes before serving. Add soy sauce to taste.
4. Pizza Rice
- Rice
- Dried pepperoni
- Dried mushrooms
- Tomato powder
- Dried tomatoes
- Basil
- Oregano
- 1/3 cup powdered cheese
Directions:
Boil one cup of water. Add rice. Add in the remaining ingredients and boil until rice is soft.
5. Tuna Noodle Stew
- 1 box of Macaroni and Cheese
- 1 packet of tuna
- Dehydrated celery or other vegetables (optional)
- 1/4 cup dry milk
Directions:
Add 1.5 cups of water and the mac-n-cheese noodles. Add celery or other veggies you’ve chosen. Boil until noodles are soft. Add cheese packet, dried milk, and tuna. Stir and heat until tuna is warm.
