There’s nothing so relaxing as cooking a hot meal over a campfire after a long day of adventure. But finding meals that are tasty as well as quick and easy can sometimes be a challenge. Below are three easy recipes for campfire cooking that you can prepare simply and quickly for your evenings under the stars!
Campfire Bacon
It’s bacon on a stick!
Prep: Build a campfire and set two logs or rocks on each side of the flames so you can rest the skewers on the logs/stones over the flames.
Ingredients/Tools: Bacon strips, skewers
Instructions: Weave each strip onto a skewer, leaving a gap between weaves. Then, continue weaving more strips on the skewer, leaving a few inches empty at the end. Rotate the skewers every five minutes or so to ensure even cooking.
Sautéed Mushrooms
Rich, savory, and easy!
Ingredients: Olive oil, garlic, sliced mushrooms, butter, salt, and pepper.
Instructions: Heat a skillet with butter over a campfire. Wait one or two minutes, and then add the onion and garlic. After two minutes add the mushrooms and cook until all mushrooms are golden brown and caramelized. Remove from heat. Add a splash of olive oil and season with salt and pepper.
Camping Salmon
Aluminum foil is the camping chef’s secret weapon. It’s easy to cook with and even easier to clean up.
Ingredients: Salmon fillets, lemon slices, butter, garlic cloves, salt, pepper, olive oil, and tin foil.
Instructions: Season salmon fillets liberally with sea salt and black pepper. Layer the lemon slices, butter, and some garlic on each salmon filet. Splash the tops of the fillets with a healthy bunch of olive oil. Wrap salmon individually in aluminum foil. Put tin foil wrapped salmon directly in fire. Cook for 6-8 minutes, or until fish is thoroughly cooked.
