There’s nothing like a big, hearty breakfast to start the day off on the right foot when you’re camping, and it’s not as big of an ordeal as you may think. Eggs and potatoes have long been breakfast staples both at home and in the outdoors, and the variety of ways to cook them into a savory meal is virtually endless. Here are three easy camping meals using different cooking techniques so you can make super savory egg breakfasts for everyone no matter what tools you have in your camp kitchen. Bon apetit!
Mountain Man Breakfast

For the dutch oven enthusiast, this easy camping meal is as delicious as it is effortless. You’ll need a package of frozen hash browns, diced kielbasa sausage (if you don’t know how to cook fresh kielbasa, check out this guide), chopped tomatoes, mushrooms, and broccoli, four eggs, and shredded cheddar cheese. Start by frying the kielbasa in the dutch oven until cooked, then add the vegetables and hash browns and allow to heat through. Whisk the eggs before pouring them over the top of everything in the dutch oven, then cover with lid and cook for 10 minutes, or until the eggs are firm. Top with cheddar and let it melt before serving.
Sausage & Egg Foil Packets

This easy camping meal requires the most minimal of cooking materials: aluminum foil. Portion out frozen hash browns or diced potatoes, diced bell pepper and onion, and sausage links or patties into aluminum foil pieces a bit larger than your portion size. You’ll want to fold up the sides so it doesn’t leak when you pour one scrambled egg into each foil packet. Cover with another piece of foil, and crimp the top and bottom together to make a completely sealed package. Set on coals and cook for 15 minutes on only one side. Remove with tongs, and open very carefully to avoid being burned by escaping steam. Sprinkle with cheddar cheese and you’ve got a self-contained, savory egg breakfast that requires virtually no cleanup when you’re finished.
Breakfast Hobo Pie

A pie iron is a fun and handy camp cooking utensil, as it allows you to create all kinds of “pies” with bread and any filling you choose. The breakfast hobo pie is so simple to assemble that the kids will have a blast making and cooking their own breakfast without realizing they’re even doing any work. Start by spraying each side of the pie iron with non-stick cooking spray. Scramble a few eggs together, and dredge two pieces of bread through it, like you’re going to make French toast. Put one slice in each side of the pie iron. Then place a sausage patty on one side, and a slice of cheese on the other. Secure the pie iron closed, and then place the iron in the coals. For the next 10 minutes, turn the pie iron over about every 30 seconds to ensure that it is cooked evenly on both sides. Pull the iron out of the fire, carefully remove your hobo pie, and you’ve got a meal that you can eat on the go, or enjoy around the campfire.
