How to Assemble Delicious Campfire Nachos

Perfect finger food for a meal or a snack, nachos are a simple and tasty way to feed groups both small and large. They’re easy to make and versatile, allowing for plenty of creative freedom. Here’s how you can assemble delicious campfire nachos on your next camping trip.

You’ll need:

  • Aluminum foil
  • Nonstick cooking spray
  • Tortilla chips
  • Seasoned ground beef (can be precooked at home)
  • Refried beans
  • Sliced or diced jalapeno
  • Chopped scallion or onion
  • Shredded Monterey or pepper jack cheese
  • Diced tomatoes
  • Sour cream

Tear or cut sections of foil off the roll, in sheets 12 to 18 inches long. Spray the foil with a thin coating of nonstick cooking spray. Lay a large handful of tortilla chips in the center of the foil, allowing them to overlap

Now for the fun part: toppings! Layer your toppings over the nachos, sprinkle with shredded cheese, then fold your foil packets closed. Place on a grill or in a cast iron pan over the campfire, and allow to heat for 8 to 10 minutes. Your toppings can be almost anything you want.

Mix things up by using shredded chicken or pork instead of beef. Make it an all veggie dish by adding chopped bell peppers in place of meat. As for cheese, you can use cheddar or even mozzarella to complement your ingredients. Italian nachos? Why not? Chopped Italian sausage, chunky tomatoes, or even cubed eggplant under a bed of mozzarella would make for a tasty meal. Go Greek with feta cheese, chickpeas, and chopped kalamata olives, plus a drizzle of olive oil. Throw in some black beans and chopped avocado for a southwestern flair.

You can even swap out the tortilla chips to suit your recipe. Use slices of pita or naan bread for middle eastern flavors, or try thinly sliced sweet potatoes as a base (slice and bake your sweet potato chips before leaving home for a sweet and crunchy, healthy bite).

Once your delicious campfire nachos are melted and gooey, carefully open the foil packets and top with diced tomatoes, shredded lettuce, and sour cream as desired. Save some time at the campsite by prepping your ingredients ahead of time. You can chop vegetables, portion out meats and cheeses, and put them into individual zip top bags for transport to the campsite, which will make for quick assembly when you’re ready to eat.
