4 Unique Ways to Serve Watermelon

School’s out and the heat is rolling in, which means it’s time to start thinking about snacks that will keep you cool under the summer sun. Watermelon is a summertime staple, but there are many more ways to serve this sweet treat than just slicing it up. Here are four unique ways to serve watermelon that the whole family will love!

1. Watermelon Cones

Put aside that tiny melon baller and go big. Using a large ice cream scoop, serve up plus-sized melon rounds atop ice cream cones, for a lickable treat that won’t melt.

2. Watermelon Dippers

Cut melon into long, slender slices (think carrot sticks). Serve alongside this tangy dip for a creamy and sweet combination.

  • 8 ounces sour cream
  • 4 tablespoons sugar
  • 1 teaspoon vanilla extract

Blend dip together in a small bowl, and chill before serving.

3. Watermelon Cucumber Salad

This light and refreshing blend of sweet and sour makes a great companion for any meal, indoors or out.

  • 1/2 cup apple cider vinegar
  • 1 cup water
  • 1/2 cup sugar to taste
  • 1 tablespoon poppy seeds
  • Salt and pepper to taste
  • 1 bunch chopped scallions
  • 3 cups seedless watermelon, cut into balls or small chunks
  • 2 English cucumbers, peeled, seeded, and sliced small

Stir the vinegar, water, sugar and poppy seeds together in a bowl. Season with salt and pepper to taste. Fold in the scallions. Placing the watermelon and cucumber in a serving bowl, pour the marinade over the top. Cover and chill for 1-2 hours, then toss gently before serving.

4. Watermelon Smoothie

For a tart and cool way to start your day, toss these ingredients in a blender and mix til smooth.

  • 2 cups cubed watermelon, seeds removed
  • 1 cup strawberries, stems removed
  • 5 ounces low fat lemon greek-style yogurt
  • 2 tablespoons instant oatmeal
  • 3-4 ice cubes

Watermelon is a great source of vitamin B6, potassium, vitamin A, and lycopene. Two cups of this juicy red fruit has just about 80 calories, making it an excellent choice for satisfying your sweet tooth without worrying about your waistline.
