3 Super Simple Potato Camping Sides

Baked potatoes are the quintessential side to any campfire meal. But when you tire of ordinary spuds in an aluminum jacket, it’s time to look into what other potato dishes you can create. Besides the old standard baked potato, there are multiple quick fix dishes that you can choose to make with potatoes over the campfire. Here are just a few delicious potato camping sides that will bring all your campfire meals home!

1. Gin Marinated Potatoes

One camping side that is sure to please the sophisticated palate is gin marinated potatoes. While it requires a little bit of prep work, it is an easy dish to create. Take a pound of fingerling potatoes, marinate them in a mixture of equal parts olive oil to gin (approximately 4 tablespoons each), add a dash of rosemary, salt, and pepper and then spoon into a foil packet. Roast the packet in the campfire coals for approximately 30 minutes, removing it to shake every ten minutes to ensure the potatoes are completely coated with the seasonings. Once the potatoes are tender, it’s time to pull them from the campfire and enjoy.

2. Sliced Potatoes with Cheese and Bacon

Another camping side featuring everyone’s favorite—bacon—requires only slicing your potatoes almost all the way through and placing pieces of cheese and bacon between each slice. Place on a large piece of buttered aluminum foil, add a couple pats of butter to the top of each potato, season with salt and pepper, and wrap foil closed. Put each potato in the coals for 20-25 minutes, and remove carefully with tongs. When cooled, add sour cream and chives for a decadent comfort food that will give any home kitchen a run for its money!

3. Cheesy Roasted Potatoes

The following recipe is a simple and scrumptious camping side, not to mention perfect for gatherings both large and small. Prebake ten potatoes and when you are ready to start dinner, cut them up into chunks. Add three sticks of butter and a liberal coating of any seasonings and herbs you prefer. Place the mixture in a foil roasting pan and cook for approximately 30 minutes on a grate over an open campfire. When finished, add grated cheddar cheese (any flavor of cheese will do) and dig in!
