3 Quick Camping Breakfasts

It’s amazing what you can do with just a hot plate, a campfire, and a cast iron skillet, and many people don’t realize just how easy it is to whip up a savory camping breakfast that everyone will devour. Here are just a few easy camping breakfasts that’ll get you an early start on the trail!

1. All-in-One Skillet

This camping breakfast is great to make on the last morning because you can use leftover ingredients from your trip. Chop two potatoes, one-half of an onion, a green bell pepper and a jalapeno. Set aside. Crumble 16 ounces of sausage crumbles or fake sausage in a cast iron skillet. Allow the sausage to brown. Add the veggies to the skillet and season with salt and pepper. Allow the veggies to cook until they get soft and a little brown on the edges. Crack three eggs into a bowl and whisk with a fork. Pour the eggs into the pan and cover. Stir the eggs until they are cooked thoroughly. Turn off the heat, and sprinkle cheese over the mixture. Cover and let sit for five minutes.

2. Breakfast Burrito

Breakfast burritos are a great way to take your breakfast on the go, whether you’re heading out for a long hike or simply relaxing by the lake. Chop one tomato, a green bell pepper, one-half of an onion and a jalapeno. In a cast iron skillet, cook four slices of bacon. Remove from the bacon from skillet and drain on a paper towel. Add the veggies to the skillet and cook until the edges are brown. Crack three eggs in a bowl and whisk with a little water. Pour the eggs over the veggies and cook until the eggs are set. Spoon the eggs and veggies onto two large flour tortillas. Crumble the bacon over the eggs, and roll up the tortillas. Wrap in foil, and pop the burrito in your bag.

3. French Toast

French toast is a no-frills camping breakfast that is ready in just a few minutes. Crack one egg into a bowl, and pour two tablespoons of milk into the eggs. Whisk together with a fork. Sprinkle cinnamon and a teaspoon of vanilla into the milk and egg mixture. Dunk a piece of bread (white, wheat, sourdough or cinnamon swirl all work well) into the milk and egg mixture. Heat a cast iron skillet and place the bread onto the hot pan. Cook until golden brown on each side.
