Being a vegetarian can be great for your health as well as for the environment, but many people think that it limits what you can eat, especially in situations where cooking is more limited. This includes camping, but it does not have to be that way. There are amazingly simple vegetarian camping meals that you can try and we have three of the best below.
1. Roasted Vegetable Sandwich
This is probably one of the easiest and most filling things to do when camping. You can easily cover the vegetables in foil and place them over the cooking stove until they are a lovely roasted color. Be sure to add a good amount of salt and to drizzle olive oil for lots of flavor. Wrap it all up in a pita bread and you have a fun, unique take on a Mediterranean sandwich.
2. Campfire Nachos
This is one of the yummiest vegetarian camping meals you can concoct. You can use any vegetables you have leftover from other meals and add the kinds of spices that you like. There is no need to add ground meat, but be sure to add chili peppers for that spicy touch. As most tortilla chips are vegetarian, you should not have to worry about that. Just look for dairy additives.
3. Baked Beans and Pasta
Beans are a great way to get protein and to fill yourself up without adding any meat, and pasta can help complete the meal. Make the beans first and then boil the pasta. Many people add sauce to their beans, and some love to add a bit of sweetness with molasses or barbecue sauce.
All of these vegetarian camping meals can allow you to have fun and still avoid meat. They are easy and they require little prep time, so that you can enjoy your camping days without worrying about your meals. Keep yourself and the environment healthy with these simple vegetarian meals that are filling and delicious.
