Though there are many dutch oven desserts that a cook can whip up for a camping indulgence, few are as scrumptious as those starring apples. Here are just three simple desserts with apple as the main ingredient that you can easily make in your dutch oven on your next camping trip.
1. Apple Fritters
You’ll need:
- Granny Smith apples, peeled, cored, and cubed – 5 cups
- Eggs – 2
- Sugar – 2 tbs
- Whole milk – 2/3 cup
- Vegetable oil – 1 tbs.
- Lemon juice – 1 tsp.
- Flour – 1 cup
- Baking powder – 1 tsp.
- Salt – 1/4 tsp.
- Vegetable oil for frying
- Confectioner’s sugar
Beat the eggs till pale yellow and light. Add the two teaspoons of sugar, milk, oil, lemon juice. Mix till well blended. Add the flour, baking powder and salt and whisk till well blended.
Pour two inches of vegetable oil into the dutch oven and heat to 370 F (use a cooking thermometer to get to the precise temperature) by heating the number of briquettes required for your model (there should be a number stamped on the lid), and place 2/3 hot coals on the lid, 1/3 below. Allow your oven to heat for about 10 minutes before dropping the batter in.
Dry the fruit with a paper towel and then add, a few at a time, to the batter. Lower carefully into the hot oil. Don’t crowd. Brown one side for two minutes, then turn and fry the other side until they’re golden brown. Drain on paper towels.
Dust with confectioner’s sugar and serve shortly thereafter.
2. Apple Snow
You’ll need:
- Granny Smith or other tart apples, peeled, cored, sliced – 8
- Water – 1 cup
- Egg whites – 4
- Sugar – 1 cup
- Lemon juice – 2 tbs.
Put the apples and water in the dutch oven. Cover and cook over coals for about 10 minutes or until the apples are mushy. Mash them until smooth.
Beat the egg whites till foamy, then gradually add in the sugar and the lemon juice. Beat till the egg whites form stiff peaks but aren’t dry. Fold into the applesauce and chill. Serve over thick slices of pound or angel food cake.
3. Baked Apples
You’ll need:
- Medium cooking apples – 4
- Raisins – 1/2 cup
- Packed brown sugar – 2 tbs.
- Ground cinnamon – 1/2 tsp.
- Grated nutmeg – 1/2 tsp.
- Apple juice – 1/3 cup
Preheat dutch oven to 350 F by heating the number of briquettes required for your model (should be a number stamped on the lid), and place 2/3 hot coals on the lid, 1/3 below. Allow your oven to heat for 15-20 minutes before placing apples inside.
Core the apples and place them in the dutch oven.
Mix the raisins, brown sugar, cinnamon, nutmeg and spoon into the cored centers of the apples. Pour the apple juice into the dutch oven.
Bake for about 45 minutes or until the apples are tender. Serve alone or with a vanilla custard.
