3 Simple and Savory Campfire Bean Recipes

Nothing beats the joy of sitting around the warm glow of a campfire with your friends. And when it comes time for dinner, what could be better than your favorite campfire bean recipes being cooked over an open flame? Campfire cooking has been a picturesque ending to a long day on the trail for hundreds of years. And throughout that time, no other single ingredient can top beans for both taste and protein. Below are a few simple campfire bean recipes that you can use on your next outing in the great outdoors.

1. Spicy Gourmet Campfire Beans

Ingredients:

  • 2 tbsp. salt
  • 2 tbsp. pepper
  •  3 tbsp. chili powder
  • 4 lbs. pinto beans
  • 2 chopped garlic cloves
  • 1 lb. chopped bacon
  • 2 tbsp. sugar
  • 1 chopped onion
  • 3 jalapeno peppers (whole)
  • 1 12oz. can diced tomatoes

Directions:
In a large pot, cover beans with water and bring to a boil. In a separate pan, brown the bacon onion and garlic over medium heat, stirring frequently. Once the bacon mixture is browned, add it to the beans and water. Cover and simmer over low heat for a few hours until the beans are soft. Then add remaining ingredients. Cover and simmer for another 10-15 minutes.

2. Campfire Bean and Beef Dinner

Ingredients:

  • 1 oz. packet of onion soup mix
  • 1 ½ lbs. ground beef
  • 1 ½ cups of water
  • ¼ cup chili sauce
  • 1 15oz can kidney beans

Directions:
Simply brown the beef, then add remaining ingredients. Cover and simmer over low heat for 20 minutes.

3. Campfire Bean Soup with Ham

Ingredients:

  • 8 cups of water
  • 2 smoked ham hocks
  • 1 large onion
  • 1 lb. dried navy beans
  • ½ tsp. pepper
  • ½ tsp. dried basil
  • 2 cups celery (chopped)
  • 1 cup carrots (chopped)
  • 4 cups of cooked ham (cubed)

Directions:
In a large pot, add beans and cover with water. Cook beans over medium high heat until they just begin to soften. Drain the beans and return them to the pan. Add the 8 cups of water plus all remaining ingredients. Cover and cook on medium heat until the beans are nice and tender. Remove the ham hocks and enjoy.
